Wash the urad dal thoroughly and keep it in a separate place to dry for 2 hours.

After 2 hours, when the dal dries well, we will roast it. For this, we will take a pan and put it on the gas and light the gas, keeping in mind that we have to burn the gas on medium flame only. When the pan becomes slightly hot, put urad dal in it and start roasting the dal. Keep in mind that while roasting the dal, it must be stirred, otherwise the dal may burn. When the dal turns light red after roasting, take it out of the pan and keep it in a utensil and let it cool for some time.

When the dal cools down, we will grind it in the mixer, try it, the finer the dal is, the better it will be. After this, we will filter this dal with a sieve so that if some dal is left unground in it, then it gets separated.

We will put some baking soda, some salt as per taste and some water in the ground pulse and mix it well. Now knead this mixer by hand for 5 to 8 minutes and in this way the batter for our Bhalla will be ready.

Then cover it for at least 2 hours and keep it at a different place. Keep in mind that after two hours this solution must be rubbed by hand once again for 4-5 minutes. If you want to use a blender, you can use it, it will also make a better mixture.

Till the time our dal dries up, we do the rest of the work. As first we make water to soak Bhalla, for that we will put 2 pinches of asafoetida in about 2 liters of water in a big vessel, our water is ready.

After preparing water for Bhalla, we make curd for Bhalla, add some sugar to the curd and mix it well in a mixie. You can also use a blender if you want. Take out the curd in a big bowl and add some salt as per taste and mix it.

Now our dal is dry, so let us start making Bhalla. For this, we will take a pan and put it on the gas and turn on the gas, keep in mind that we must run the gas on medium flame only, after that we will put oil in the pan. When the oil becomes hot, start frying small pakodas like dals. You will see that when the bhalla gets fried, it turns golden in colour. As soon as the bhalla starts to turn golden in color, take it out of the pan and put it in the asafoetida water that we had already prepared.

Important Tips:

  • Dry the urad dal thoroughly before roasting it.
